Vineyard
Moderate weather throughout the season, and specifically during harvest time, resulted in grapes ripening more slowly. This contributed to good vine growth, bunch numbers and berry sizes, with a great flavour profile, creating wines of good colour extraction with low pH levels and high natural acidity, which all point to exceptional quality wine. Grapes for this wine were sourced from several vineyards, both young and old, which were sensitively vinified and blended to create a complex, vibrant wine.
Winemaking
Grapes of this wine were harvested and destemmed before alcoholic fermentation, during which timed pump overs were used to further enhance colour and tannin structure. This wine was pressed before fermentation was complete to preserve fruit flavours and create a complex structure. A portion of the wine was then aged in old French barrels for subtle oak influence, and the rest was matured in tank.
