Winemaking

This lip-smacking Rosé wine is a creative and delicious blend of Chenin with a kiss of Pinotage. The Chenin grapes are grown in the Worcester region. The town of Worcester is known as a small town, with an old soul and a big heart. The Pinotage grapes are grown in the ‘uber trendy’ region of Swartland. The Chenin grapes are all hand harvested in the early hours of the morning and processed as cool as possible. They are pressed to Stainless steel fermentation tanks and the juice is handled reductively. The tanks are inoculated with cultured yeast and the fermentation is cooled to allow for maximum flavour development. Post ferment, the wine is kept on the fine lees to develop flavours. The Pinotage grapes are also hand harvested, then crushed and destemmed into stainless steel fermentation tanks. Fermentation is achieved through the addition of cultured yeast strains. Extraction is achieved through aerated pump overs and a total of 2 weeks on the skins.

The two wines are blended prior to bottling, where the skill of Praisy, the winemaker, comes in to play. She ensures there is perfect blend of ripe pear and white peach flavours from the Chenin, fused with the kiss of fresh strawberry and candyfloss flavours from the Pinotage.
